Hello. I am Jax Hamilton.
A funky, energetic personality, I like to say what I mean, because I mean what I say!
I am exceedingly adaptable, amiable and love people. The world in general really interests me; I look for different, fresh, fascinating. I love to be educated and feed on new information! Ray McVinnie describes me as ‘attractive and effervescent’, just had to put that in. True to my Aquarian sign I am an idealistic thinker drawn to the concept of liing my life outside the box and would describe myself as a ’round peg’ sometimes in a ‘square hole!’
Where food is concerned, I like to think of myself as an inspirational cook, who loves to blend a little cockney with a little Caribbean all served up on a kiwi plate!
Known particularly for preparing food that is easy to emulate, sourcing locally produced, fresh seasonal ingredients and creating dishes that maintain the integrity of the produce, I always allow for a bucket load of creativity and am happiest when I can present a dish which is recognisable from its original organic existence, maintaining the integrity of the raw materials.
Inspirational guidance comes from talents such as Peter Gordon, Donna Hay, Nigella Lawson, Gordon Ramsey and the ever alchemist and Fat Duck himself, Heston Blumenthal!
For 12 intensive weeks during the MasterChef competition, I produced a high level of cooking, consistently winning the most challenges and captivating accolades such as “This is a MasterChef dish” from Josh Emmet, Michelin star chef with my Pasta : Ravioli creation and “This is bloody good, I am left with this amazing flavour in my mouth; love the level of heat” from Simon Gault, following my four harmonizing winning curry dishes.
I really hope this snapshot gives you an insight to where I come from, because I am determined to enjoy this journey and if you can keep up with me or trying to track me down, you will always find me in the kitchen at parties.
