For the last 3 years, I have been blessed to work in this amazing place, Kaikoura
for the annual Seafest Festival. Which, for those of you not familiar with NZ is on the East Coast of the South Island, it is stunning. Thousands of people flock to this region to sample beautiful wines, delicious seafood and generally have a fabulous time. The tent goes up on the rugby field, between the ocean and the mountains on the Friday night
and that night, the party, starts with the Big Bash.
Along with my team, over the course of the day, I demonstrate in the Cuisine tent. This year, we had scallops with a spicy coconut sauce and warm asparagus salad. Pan fried lamb with salsa verde and moroccan cous cous and I like to end my demonstrations with a sweet. So utilising local ingredients, and a fragrant handpicked Pina Colada tea leaf. I made a sweet stock and a risotto with sticky pineapple and toasted coconut (sorry no pics) the food was snapped up before I could grab my camera!
We also did a roaring trade next door selling my Jerk products : Chicken and sweet chilli prawn kebabs, Jamaican Patties and of course my world famous Hot Pepper Sauce.

Of course as well as being about food, there is always so much to look at when we’re cooking and serving as everyone dresses up and it’s hilarious to watch. Here are some of my favourites!
