Bacon Loaded Mac N Cheese

Who doesn’t love a spoon, side or bowl of gooey, cheesy, mac N cheese. With this base you can literally turn a bog standard recipe into a loaded food gospel – #AMEN. Don’t be shy with your cheese and the added egg yolk, creates a silky stunning dish to impress – ding! dong!

Serves: 6

Ingredients

150g macaroni
4 rashers, streaky bacon, thinly sliced
1 tbsp *Hax Garlic and Herb butter
2 tbsp flour
350 ml milk (warm)
1 tsp mustard
1 egg yolk
1 spring onion, thinly sliced
½ cup mozzarella
½ cup  cheese
½ cup *Crispy, crunchy, Garlic and Herb breadcrumbs

 

Instructions

Preheat oven to 180. Lightly grease a dish or I like to use my cast iron pan which I chuck straight in the oven.

Boil the macaroni as usual, just before its fully cooked, remove from the heat and drain (we will be cooking it a little longer in the pan and oven).

While the pasta is cooking, fry your bacon how you like it (I like mine crispy), remove from pan and set aside until ready to combine with the other ingredients.

In a deep, non-stick saucepan, add the butter, when bubbling sprinkle in the flour and cook for about 1 minute. Slowly whisk in the milk until you have a thick, silky smooth sauce.

Remove from the heat, add the cooked bacon, mustard, yolk, cheeses and spring onion. At this stage you can also add your loaded ingredients. Taste and season with salt and pepper.

Scrape into the dish and bake until bubbling. Remove from oven sprinkle over breadcrumbs and return to oven for 5 minutes.
