Banana & Cinnamon Dumplins

These will change your life.  All you need is half an hour, some over ripe fruit and enough will to NOT eat everyone of these crispy, soft, sweet beauties.

Serves: 8

Ingredients


1 tbsp caster sugar
1 tbsp cinnamon
1 cup plain flour
1/2 cup cornflour
1 1/2 tsp baking powder
100ml warm milk
6 bananas, peeled & mashed
1 egg white
oil for deep frying
1/4 cup Jax Food Hax Sweet Spice Mash Up : 1#

Instructions

Sift the caster sugar, cinnamon and remaining dry ingredients together, then slowly pour in the milk and fold until smooth.

Mix in the bananas.

Beat the egg while until it forms small peaks and fold into your batter.  Chill for 20 minutes.

Heat your oil (pop a wooden spoon into the oil, when bubbles appear where the spoon meets the oil it’s ready) and carefully drop in spoonfuls of your banana batter. Your batter may be a little runny, not to worry, this gives your dumplins crispy bits and makes for the best ever batch.

Cook until crisp and golden.

Drain on kitchen paper, then toss through your Sweet As Spicy Sugar.

Note : don’t  burn your mouth and fingers as soon as they come out of the sugar, this has happened to me, and it’s not nice.

Serve : With vanilla ice cream OR a berry coulis OR God help me – drizzle with chocolate sauce.
