Chicken, Zucchini & Pesto Soup
An easy to prepare, beautifully wholesome and creamy soup, filled with personality and flavour. For added texture, don’t forget to sprinkle with my Jax Food Hax Crispy Herb and Garlic Crumb.

Cook time: 25 min
1 drizzle oil
knob of butter
1 onion, finely chopped
1 clove garlic, crushed
1 tbsp *JFHx Savoury Spice Mash Up
(for the spices, either create your own or use the fish blend)
1 potato, diced
2 cups cooked chicken, diced
2 zucchini, grated
1 tin creamed corn
500ml chicken stock
1 tbsp pesto – garnish
Optional : *JFHx Crispy Herb and Garlic Crumb

Pour the oil into a medium sized saucepan, add the butter, when bubbling, add the onion, garlic and spice mix.
Cook gently until the onion is soft and the mixture is fragrant. Add the potato, toss with the onion mixture and cook for a further 4 minutes.
Add the chicken, zucchini, creamed corn and chicken stock.
Bring to a boil, then simmer for 5 minutes. Taste and season with salt and black pepper
Remove from heat and serve with a drizzle of pesto.
