Fettuccini w Prosciutto, Rocket & Lemon Oil

Only a few ingredients, together on a plate, make this Italian inspired dish, such a magical creation.  The italian’s certainly know how to pack a punch with the best of the best. Just like Mamma used to make. Ciao!

Serves: 4


150ml extra virgin olive oil
zest of 1 lemon
500g fettucini
8 slices prosciutto
250g rocket salad
100g parmesan
salt & freshly ground black pepper


FOR OIL: Heat oil in a pan or pop in the microwave for 25 seconds until just hot enough to pop your finger in.  Spoon in the lemon zest, stir and allow to sit for at least 30 minutes.

Cook the pasta as directed on packet. If fettuccine not available you can use, linguini, tagliatelle or even fresh lasagna rolled and cut into wide ribbons.

Drain, place in a large bowl, drizzle with half the lemon infused oil, toss together.

Tear the prosciutto into bite sized pieces and toss through the hot pasta, followed by the rocket.

TO SERVE: Dress your dish with shave parmesan and the remaining oil.
