This recipe is simple and beautiful. It just goes to show you don’t need a pantry full of ingredients to create something sumptuous, creamy, seasonal and delicious. Celeriac season for me is a divine gift from god, the fact the season is quite short, make it even more of a reason to celebrate.

Slow Braised Beef Cheeks in Chipotle & Adobo SauceThis is the absolute perfect dish for those cold days when you want to fill the house with oven-love. The cheeks are meaty and require a gentle, slow cook and in this sauce, where the smoky chipotle peppers and adobo sauce elevate the stickiness of the meat, make the perfect combination. When cooked, the meat is moist, tender and falls apart at the hint of a fork, pile on top of fluffy mash or a kumara puree and the winter season is complete and worth celebrating.

Masala Spinach Risotto w Pan Fried TofuSmooth, creamy, with a hint of spice. This risotto is an impressively sexy dish, perfect to serve when the nights are dark, but you want a little heat and sunshine in your heart. Serve in a bowl so you can wrap your hands around it, feel the heat on your chest and inhale the deeply exotic spices of India. |

Kale and Feta EnchiladasOooh yes, this is one of those dishes, that turns your ‘oh no not vegetarian‘ frown upside down. Bags of flavour and really easy to chuck together. Don’t forget, all veggies are good and if you don’t have kale, thinly sliced brussel sprouts are equally as divine. |

Korean BBQ BeefSimple, easy and full on flavour, is the only way to describe this dish. The traditional name is Bulgogi, meaning ‘fire-meat’ which derives from cooking in a searingly hot wok, pan or on the BBQ. Use beef, pork or tofu and also if you’re cooking for a crowd, chuck in some veggies. |
