Oooh yes, this is one of those dishes, that turns your ‘oh no not vegetarian‘ frown upside down.  Bags of flavour and really easy to chuck together.  Don’t forget, all veggies are good and if you don’t have kale, thinly sliced brussel sprouts are equally as divine.

Chickpea, Corn and Coconut Patties

When you’re friends turn up to your BBQ, with that mate who eats ‘nothing with a face’, turn your frown upside down with these crispy, delicious babies. Oh yes, once you get one of these between two buns who needs meat? (well I do, but they won’t care because these are incredible). Pair with my coconut slaw and a dash of hot sauce and Mama is in TOWN!! Also, these babies are GF too!

Peanut & Pumpkin Curry

There’s nothing I love more then a good old ‘ruby murray’, and when I have one, it has to punch me in the face with flavour.  If like me, you eat ‘anything with a face’ but are keen to try a vegetarian curry then my advice is make sure it’s a hearty one so you don’t even realize there is no meat in it! This one ticks all the boxes and you end up with a satisfied snake belly! Don’t forget your pint on the side – sorry, just can’t help it!

Cashew Nut Pesto

I make this pesto every week, why, because it can be used with so many different dishes. Try it in sandwiches, on pizza, with grilled meats or drizzle through a good soup. Fabulous on an anti pasta platter or tossed through some pasta or mashed potato. Even for breakfast on hot toast with avocado……oohhh… somebody stop me!
