Roasted Salmon with Pesto Tossed VeggiesI often create, this elegant dish for my girlfriends and I, when we don’t want to consume too many carbs, (because our wine intake won’t allow it!!) Or if my boys are popping round and want to load up on veggies with a meal containing a meaty fish. On a more serious note, this dish is great if you’re a diabetic or if carbs for tea isn’t always what you need. Gluten Free and bags of flavour. |

Peanut & Pumpkin CurryThere’s nothing I love more then a good old ‘ruby murray’, and when I have one, it has to punch me in the face with flavour. If like me, you eat ‘anything with a face’ but are keen to try a vegetarian curry then my advice is make sure it’s a hearty one so you don’t even realize there is no meat in it! This one ticks all the boxes and you end up with a satisfied snake belly! Don’t forget your pint on the side – sorry, just can’t help it!

Cashew Nut PestoI make this pesto every week, why, because it can be used with so many different dishes. Try it in sandwiches, on pizza, with grilled meats or drizzle through a good soup. Fabulous on an anti pasta platter or tossed through some pasta or mashed potato. Even for breakfast on hot toast with avocado……oohhh… somebody stop me! |
