Kale and Feta Enchiladas

Oooh yes, this is one of those dishes, that turns your ‘oh no not vegetarian‘ frown upside down.  Bags of flavour and really easy to chuck together.  Don’t forget, all veggies are good and if you don’t have kale, thinly sliced brussel sprouts are equally as divine.

Korean BBQ Beef

Simple, easy and full on flavour, is the only way to describe this dish.  The traditional name is Bulgogi, meaning ‘fire-meat’ which derives from cooking in a searingly hot wok, pan or on the BBQ.  Use beef, pork or tofu and also if you’re cooking for a crowd, chuck in some veggies.

Chicken, Zucchini & Pesto Soup

An easy to prepare, beautifully wholesome and creamy soup, filled with personality and flavour. For added texture, don’t forget to sprinkle with my Jax Food Hax Crispy Herb and Garlic Crumb.

Seafood Lasagne

I love lasagna, fish and seafood so for me it’s the perfect combination. Using my simple 3 step – lemony, herb and cheese sauce with mouthfuls of fish and seafood, this is a marriage made in heaven. As seafood goes, it’s really is up to you, here I’ve used a combination of white fish, marinara mix, and extra fresh prawns, but you can take out or add whatever you like.  Also if you don’t have any fresh (or can’t be bothered), there are some fabulous pasta sauces on the market to choose from too.

Pan Fried Cod with Pickled Seasonal Veg

This is one of those old school, new age dishes that spring up now and again.  When I was a kid, we would fry our fish, then in the same pan, using the fishes juices, create a warm side of vegetables cooked gently in a little vinegar. The small amount of vinegar is just enough to combine and lift all the delicate flavours.  Simple and divine.
