Roasted Pumpkin & Coconut Soup

This is the perfect example of an amalgamated Jax creation.  I never, ever ate pumpkin until I came to kiwi-land.  I don’t even remember seeing it for sale in my local supermarket, grocers or market.  However, it is sold in abundance here.  Of course you all know my favourite food is soup and I love anything spicy!  What more is there to say.  Oh yes, AND I love coconut.

Beef Olives with Asparagus and Vine Tomatoes

Beef olives, never liked them – couldn’t understand them, after all there isn’t an olive in sight!. What I didn’t realize was I just needed to approach them in a different way. Here I have taken the raw ingredients and developed them around flavors I really like and how I like my meat cooked along with some seasonal veges. This is a great bistro dish and so easy to prepare.  A modern taken on a very kiwi-traditional meal. I hope you enjoy it as much as me.

Chermoula Lamb Chops

When it comes to the BBQ, you just can’t beat a lamb cutlet, crisp and caramelised on the outside with sweet pink, tender and juicy meat when you take a bite. Combined with this north African marinade and we are talking all the goods!!  Great on all cuts of lamb, pork and chicken too.  Off season, great under the grill or roasted to perfection.
