Lemon Infused Olive Oil

Great as a dressing for a salad, drizzled over grilled fish or meats. In a marinade or stir fry. If I’m making a mousse filling for ravioli I use it sometimes instead of having the zest or the juice, which can often bleach the colour out of fresh herbs.

Whitebait & Scallop Ravioli – Limoncello & Dill Sauce

Whitebait is fishy gold as far as I’m concerned and when it comes to scallops the season isn’t very long.  This recipe is not only top notch delicious, but also ensures your treasure goes a long, long way.

This was my recent Boxing Day dish and I served it to a genuine bonafide seafood hater, who once the plate was licked clean, presented their ‘Can I have some more’ Oliver Twist eyes!

Pasta does take a little time to prepare, but when it does, it is so very worth it.  I have to say a big thanks to Cam Duff for his generous donation of Whitebait!

Mini Cheese and Onion Marmalade Savouries

Don’t you just hate it when you get the half-eaten cheese platter conundrum! Really expensive cheese that you can’t re-serve and don’t want to throw out.

Well this quick and easy recipe will solve all those problems and make you smile from the inside! The great thing is, a small amount of cheese & a spoonful of relish goes a hellova long way. 15 minutes to cheese platter heaven!!!

Red Velvet Xmas Cheesecakes

As well a being my favourite colour, these darling little cheesecakes are velvety smooth and delicious. Topped with a dollop of cream and grating of white chocolate, oh so decadent too. Shhhh – I can get a whole one in my mouth – can you?

Vegetarian Spring Rolls

For a lovely dinner party starter, canapés or a platter with friends, try one, two or all three of these easy Asian dishes. You can mix and match or play around with herbs and fillings.

Great to make in large batches and freeze too.
